|BARBEQUE STYLE TEMPEH
1 TBSP. OLIVE OIL
1 LARGE ONION, COARSELY CHOPPED
1 RIB CELERY, THINLY SLICED
1 LARGE RED AND GREEN PEPPER, SEEDED AND DICED
1/2 CUP OF VEGETABLE STOCK OR WATER
8 OUNCES TEMPEH CUT INTO 1" CUBES
Heat oil and saut'e onion, celery and peppers for about 2 minutes. Add barbeque sauce and stir in stock to thin it to a medium-thick sauce. Stir in tempeh . Simmer, cover, until tempeh is slightly puffed and filled with flavor, about 15-20 minutes. Adjust seasonings and serve over pasta or rice.
TEMPEH: A soy food cooked with grains, and aged with a special culture that binds mixture into a firm substance. Rich in protein,it also supplies 12% ofthe RDA for calcium and 23% ofthe RDA of iron in men, 15% for women. Must be kepted frozen due to the live culture. A great meat substitute.
