Stuffed Bell Peppers

4 bell peppers, halved, seeded
1 mashed avocado or potatoe
1/4 cup chopped celery
1 medium beet, shredded (or carrot, parsnip, turnip or any combination.)
Braggs to liking
1 tablespoon chopped parsely
2 tblspns sunflower seeds raw

Mix all the ingredients but the bell pepper. Fill the pepper shells and top with garlic powder and olive oil. (If you wish this recipe cooked, steam the bell peppers 3 minutes, cook the root vegetables until tender and proceed with recipe. Do not cook avocado. Serves 4 to 8.
