|THE GAS CRISIS:
Often people are somewhat cautious about getting too full of beans, due to their reputation in the aroma department. It helps to understand the origins of intestinal gas, so that you can eliminate potential digestive difficulties. Starches and sugars from plant foods are absorbed in the small intestine, leaving the indigestible fiber to pass along to the large intestine. In the large intestine, bacteria digest short, fiber-like molecules, which are present along with fiber; a product of this bacteria! action can be gas. To minimize those moments, here are some tips:
1. Always soak your beans over night and rinse them well.
2. When cooking your beans always use a sea vegetable such as kombu, since they help neutralize gas production. Remove the sea veggie afler beans are cooked.
3. Epazoate is a herb that prevents gas problems. It can be used in seasoning bean dishes and is a component of many chili powders.
4. Beano - An enzyme preparation which, when consumed at the same time as a bean dish, breaks down much of the indigestible carbohydrates that can cause gas. Just add a few drops to dish before eating.
