COUS COUS CAKE WITH FRUIT KANTEN
6 CUPS OF APPLE JUICE
2 CUPS COUS COUS
2 CUPS RIPE PINEAPPLE
6 KIWI'S OR STRAWBERRIES
2 TABLESPOONS ARROWROOT FLOUR
3 TABLESPOONS AGAR AGAR FLAKES
1 TEASPOON PURE VANILLA EXTRACT
In a medium sized pot, whisk the cous cous into 4 cups of boiling apple juice. Remove from
heat cover and allow to sit undisturbed for 10 minutes. After the cous cous has swelled
and cooked, gently fold in pineapple and 1/2 teaspoon of vanilla. Scoop the mixture into a
serving dish and soflly level it using the back of a large spoon or spatula. Set aside.
Arrange the sliced fruit on top of the cake.
To prepare the topping ,bring another 2 cups of apple juice to a boil. Add the agar agar
flakes to the juice and stir on high until the gel has completely dissolved. Stir the
arrowroot flour into a Y2 cut) of cold apple juice and pour into the pot. The new mixture
will become clearer and thicker as it rapidly comes to a boil. Stir continuously
throughout the starching process to prevent scorching. Turn the heat off and add 1/2
teaspoon of vanilla . Pour the mixture over the top, making sure the fruit is completely
submerged. Cool and refrigerate until ready to serve.
